Have you ever heard of people called Diêm dân?

In the dry season, when the sun begins to rise, Diêm dân go out to the fields to build soil, pound the soil, make water tanks, water channels… to prepare to receive the “gift” from heaven and earth. And when the sea salt grains are born, the Diêm dân are the ones who are excited to touch them first.

Sahu salt is harvested on the ground, so Diêm dân must carefully prepare the fields, pound them many times to create a flat and hard ground like cement, and then add seawater. This is also the traditional way of making salt of the ancients. And strangely enough, only this method can produce the sea salt that salt farmers believe is the most delicious and pure.

The traditional way of making salt in our homeland is so lovely because it does not waste any raw materials. Salt farmers are engineers who determine the salinity of seawater, architects who build embankments and make the fields flat and flawless, and also athletes who carry heavy baskets of salt. Therefore, like a powerful wizard, Diêm dân combine the energy of the sun, the ocean, the wind and Mother Earth to create the “vital” spice of humanity.

Sahu felt lucky to stand on the vast salt field, as if standing between heaven and earth. The salt grains were crystallized on the first day, the second day, the third day until they matured and were then raked up to carry out their mission. The salt grains were small, beautiful and pure white. The salt grains were cherished by primitive hands but filled with positive energy.

Each Diêm dân will have a few plots of land to make salt. On a salt field, the square, parallel and even plots of land form a beautiful picture that inspires many photographers, artists... Sahu alone is still most moved by the beauty of the salt farmer's labor.

Sahu Salt is the name given by a little girl born and raised in the coastal village of Sa Huynh in Quang Ngai province. What she desires most is to preserve the salt-making profession on the traditional land of her homeland, to preserve the essential and good spice source for ourselves and our descendants. Sahu believes that each of us is moved by something, and she is moved by the beauty of labor, of the nation, of her homeland.

Together with her, we cherish the Diêm dân, cherish each grain of salt crystallized from the soil, water, sun, wind and sweat of people. No one else but ourselves will together preserve the salt making profession and the traditional values of the Vietnamese people.
