What is sustainable production? In Article 3 of Decree 109/2018/ND-CP, the definition of organic agriculture is "a production system that protects land resources, ecosystems and human health, based on ecological cycles, biodiversity adapted to natural conditions, without using factors that have negative impacts on the ecological environment. Organic agriculture is a combination of traditional techniques and scientific advances to benefit the common environment, creating fair relationships and a balanced life for all members of the ecosystem." European regulations on organic farming are similar.
It is worth mentioning that, instead of having to set out regulations on characteristics, properties, and standards for an organic product, organic production is put first and organic production must aim for sustainability . This shows the importance of agricultural production without affecting the ecosystem when we are currently dependent on chemicals and factors that are harmful to land, water resources, air, microorganisms, animals, and humans.
According to the USDA, salt is only considered a mineral and not an agricultural product. However, with the traditional method of solar salt production, Sahu believes that traditional sea salt should still be considered an agricultural product with labor and long-standing farming techniques. Traditional sea salt production contributes greatly to maintaining biodiversity and protecting the environment, so we aim for sustainable production by:
- Producing and trading sea salt on ground (instead of tarpaulin or cement), promoting the value of traditional sea salt by increasing purchasing prices, promoting the production of salt flowers (a high-value product for salt farmers)
- Contribute to the preservation of the traditional Sa Huynh salt fields, participate in the project of planting mangrove trees around the salt fields to restore the lost ecosystem and develop biodiversity here as well as try to adjust product packaging in the future to minimize plastic waste.
-During the production process, do not use materials that are harmful to humans and animals.
- Comply with food hygiene and safety regulations.
- Regarding products, we are always loyal to the criteria: completely chemical-free: preservatives, flavoring agents, bleaching agents, anti-stick agents, colorants, odors, etc.
For the traditional salt fields of Sa Huynh, there are many things beyond the control of Sahu and it is difficult for one Sahu to do anything. Sahu hopes that those who love and support the sustainable production path for sea salt will join Sahu in preserving the traditional salt fields, promoting the value of sea salt not only in cuisine but also in the environment and the lives of local people.
Sahu chose to post a picture of a pretty little girl from Hanoi standing on the Sa Huynh salt fields during a visit because every time Sahu looks at the children, he immediately thinks of the word "sustainability". Sahu simply understands sustainability as something we have today, and something we will still have in the future, without changing, fading, or deteriorating. What can we do so that when the children grow up, they can still enjoy it: a piece of fresh, cool vegetable, a ripe, fragrant orange, a grain of pure natural sea salt, etc.?
